Drying Coffee in Colombia: Marquesinas, Patios and the Moisture Rule
Growing takes years and picking takes a morning. Drying takes about a week, and it is the stage where a farm is most likely to lose everything it has worked for.

On most farm tours, drying gets four minutes. The guide gestures at a plastic tunnel full of pale beans, says something about the sun, and moves you along to the tasting room.
That is a shame, because drying is where the highest-stakes decisions on a Colombian coffee farm get made. It is the longest stage, it is the least controllable, and it is the one most likely to destroy a lot outright. A farm that fumbles fermentation makes a mediocre coffee. A farm that fumbles drying can lose the crop.
Why drying is the dangerous stage
Coffee comes out of the wet mill as parchment, wet and biologically alive. In that condition it will not keep. Left alone it moulds within days.
The job is to bring the moisture content down to a level where the seed is stable and dormant, without going so far or so fast that you damage it. There are two failure modes and they sit close together:
- Too wet, or dried unevenly — mould takes hold in the damp pockets. Beyond the immediate spoilage, this is the pathway to serious contamination in stored coffee, which is why buyers test for it.
- Too dry, or dried too aggressively — the seed becomes brittle, shatters during hulling, and loses shelf stability. Over-dried coffee also ages faster and flattens in the cup.
- Dried too fast under hard sun — the outside case-hardens while the inside stays wet, which reads as dry on a surface test and fails later.
And it all has to happen outdoors, in a country where a clear morning turns into a downpour by three in the afternoon with no warning.
The number everyone works to
The target sits in a narrow band around ten to twelve percent moisture content. Below that and you are into brittleness and premature ageing; above it and stability and mould risk become real problems. Buyers test on arrival, and coffee outside the band gets discounted or rejected.
Larger operations use electronic moisture meters and check batches repeatedly toward the end of the drying run. Plenty of smallholders still work primarily by feel and experience, and are startlingly accurate at it — which is a reflection of doing the same thing several times a year for thirty years, not folklore.
If a farm has a moisture meter, asking for a reading on the batch in front of you is a good question and most producers enjoy answering it. It is also a quick way to tell whether the drying floor is actively managed or just where the coffee sits.
The marquesina
The parabolic solar dryer is the piece of equipment most identified with modern Colombian coffee, and once you know what one looks like you will see them from every road in the coffee departments — long, low tunnels of translucent plastic stretched over a curved frame, glowing in the afternoon.
The design solves the country's specific problem. The cover admits sunlight and traps heat while keeping rain off entirely, so a batch never has to be rushed under shelter mid-afternoon. Open ends and side vents let humid air escape, which is the part people miss — a sealed greenhouse would simply cook the coffee in its own moisture.
Inside, parchment is spread in a thin layer on the floor or on raised mesh beds. Raised beds are better: air moves underneath as well as over, so drying is more even and takes less turning. They also cost more, which is why plenty of farms still use the floor.
The coffee is raked or turned regularly, several times a day, so that no layer sits damp against another. On a working farm during harvest, someone is doing this constantly. Depending on weather, load depth and elevation, a batch typically takes somewhere between five and twelve days.
The patio
Before marquesinas there were patios — open concrete or tiled slabs, sometimes the roof of the house itself, where coffee was spread in the sun and shovelled back under cover when the sky turned.
Patios still exist and still work, and they have a genuine advantage: nothing dries coffee like direct, unfiltered sun and moving air. Their disadvantage is obvious. Rain is a race, dust and animals are a constant, and a single missed afternoon can wet a batch that had almost finished.
Some of the most striking sights in the coffee country are the old sliding-roof houses, where the entire drying floor rolls under the eaves on rails when weather comes in. If you see one on a tour, it is worth the detour.
Salento's farms are compact enough that the drying area is usually part of the standard walk rather than an add-on, which makes the region a straightforward choice if you want to see the full chain in one visit.
Mechanical drying
Larger farms, cooperatives and mills that handle volume run mechanical dryers — rotating drums, often called guardiolas, or static bed dryers, heated by burners.
They are consistent, they are fast, and they do not care what the weather is doing, which during a heavy harvest is the whole argument. The trade-off is heat control. Push the temperature to save time and you damage the seed. Well-run mechanical drying is gentle and slow by machine standards; badly run mechanical drying is the fastest way to flatten a good lot.
A common hybrid, and arguably the best of both, is to start a batch in the sun and finish it mechanically. The coffee gets the character of solar drying through the critical early phase, then a controlled finish that removes the last few percentage points without gambling on a clear week.
Reading a batch by hand
The traditional checks are simple and you will probably be shown them:
- Bite it. The parchment husk should be brittle and crack cleanly rather than bending. Under-dried parchment gives instead of snapping.
- Squeeze the bean. Press the green seed with a thumbnail. It should resist and hold its shape, not dent.
- Colour. Dried parchment is uniformly pale beige. Blotches, darkened patches or greyish areas mean uneven drying or the beginnings of mould.
- Sound. A handful of properly dried parchment rattles. Wet coffee is dull and heavy in the hand.
None of these replaces a meter for the final call, but together they tell an experienced producer within a percentage point or so — and they tell a visitor a great deal about what stage the batch in front of them is actually at.
The rest phase nobody mentions
Coffee is not shipped the moment it hits target. It goes into storage as parchment and rests, typically for a period of weeks, in a cool dry store.
Two things happen during that rest. Moisture equalises through the batch, so pockets that dried faster than others come into line. And the coffee stabilises in the cup — freshly dried parchment can taste green and unsettled, and the character rounds out with time.
This is also why parchment is the form coffee is stored and traded in domestically. The husk is protective. Coffee is only hulled to green shortly before it needs to be sold or shipped, because once that layer is off, the clock on quality starts running much faster.
Drying is best seen in the late morning, when the marquesinas are hot and someone is turning batches. That is an awkward slot to reach by bus from the towns; if the processing chain is the point of your trip, driving yourself buys you the good hours. Compare rental cars.
What to look for on the drying floor
- Depth of the layer. Thin and even is good. Deep piles are hard to dry uniformly and mean the farm is short of space for the volume it took in.
- Signs of recent turning. Rake marks, an even surface, someone with a tool nearby.
- Batch separation. Different lots kept apart and labelled, rather than everything blended into one floor. Separation is the prerequisite for a farm being able to tell you anything specific about what you are drinking.
- Ventilation. Open ends, side vents, air genuinely moving through the tunnel.
- Cleanliness underneath. Coffee picks up whatever it sits on.
Spend fifteen minutes here rather than four and the rest of the tour reorganises itself around it. Everything upstream is preparation for this stage, and everything downstream depends on it having gone right.
